White Bean Chicken Chili
This white bean chicken chili was one of my first ever attempts at cooking with white beans and YES we'll be having it again and again. It's definitely a keeper!
I took inspiration for the flavor profile from a recipe I found on Pinterest, but used far fewer ingredients and much simpler instructions. I don't have the patience for complicated cooking. 😜
This chili was even more delicious the next day, as such dishes should be.

White Bean Chicken Chili
1 lb Chicken thighs
1 cup chicken broth
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1 tsp ground cumin
Put everything listed above in the quick cooker or instant pot and pressure cook for 40 minutes, self releasing steam for 15 minutes.
Remove the chicken from the cooker and either shred or chop it to small pieces. Add it back to the pot with the following:
1 can cannellini beans drained and rinsed
1 can northern white beans drained and rinsed
1 can diced tomatoes and chilies, drained
1 cup fresh or frozen corn kernels
1/4 cup chopped cilantro
4 oz vegan cream cheese
Cook on chili setting covered with just a lid for 15-20 minutes, stirring periodically.
Serve as is or with your choice of accompaniments.
