Skinny Shrimp Po’boy (ready in under 10 minutes)
Skinny Shrimp Po’boy (ready in under 10 minutes) Ingredients 1 lb XL shrimp, tail off, thawed drained, and patted dry with a paper towel 3 Tbsp gf flour 1 Tbsp seafood seasoning mix (I used Phillip’s famous seafood seasoning) 1 Tbsp olive oil 2-4 Soft Sandwich Rolls (it depends on how big the rolls are) - Toss the shrimp in a bowl with the flour and seasoning until evenly coated. The coating will not be heavy. - Heat olive oil in a skillet and lightly fry the shrimp until light brown on one side then flip and repeat to brown the other side. - Place desired amount of shrimp in a soft sandwich roll and top with sweet spicey sauce (recipe below) and thinly shredded lettuce. Sweet and Spicy Sauce Mix together: - 2 Tbsp of Dijon Mustard - 2 Tbsp mayo - 2 Tbsp sweet chili sauce I kept it simple, but you could also look up a recipe for a traditional remoulade.
