Asian BBQ Egg Roll in a Bowl



Prep Time: 15 minutes

Cook Time: 15 minutes (assumes rice is already made or is being made while the recipe is prepared.

Makes around 6 Servings

Ingredients
  1. 12 oz ground turkey
  2. 1/2 teaspoon salt
  3. 1/2 teaspoon pepper
  4. 1 red bell pepper, diced
  5. 1/2 yellow bell pepper, diced
  6. 1 small red onion, diced
  7. 1 jalapeño, diced
  8. 1 nub peeled ginger, minced
  9. 2 cloves garlic, minced
  10. 2 cups red cabbage, chopped
  11. 1 large carrot, shredded

Instructions

  • Brown 12 oz ground turkey seasoned with salt and pepper in a large skillet or wok, then remove from pan into a bowl.
  • Add ingredients 4-9 to the skillet or wok and sauté the veggies on medium-high heat until they begin to soften (approximately 8-10 minutes)
  • Toss the cabbage and shredded carrots and cook for another five minutes or so, stirring often
  • Stir in 2 tablespoons of your favorite BBQ sauce
  • Add salt and pepper to taste (optional)
  • Serve with rice
