Asian BBQ Egg Roll in a Bowl
Prep Time: 15 minutes
Cook Time: 15 minutes (assumes rice is already made or is being made while the recipe is prepared.
Makes around 6 Servings
Ingredients
- 12 oz ground turkey
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 red bell pepper, diced
- 1/2 yellow bell pepper, diced
- 1 small red onion, diced
- 1 jalapeño, diced
- 1 nub peeled ginger, minced
- 2 cloves garlic, minced
- 2 cups red cabbage, chopped
- 1 large carrot, shredded
Instructions
- Brown 12 oz ground turkey seasoned with salt and pepper in a large skillet or wok, then remove from pan into a bowl.
- Add ingredients 4-9 to the skillet or wok and sauté the veggies on medium-high heat until they begin to soften (approximately 8-10 minutes)
- Toss the cabbage and shredded carrots and cook for another five minutes or so, stirring often
- Stir in 2 tablespoons of your favorite BBQ sauce
- Add salt and pepper to taste (optional)
- Serve with rice
