Taco Tuesday

These ingredients are versatile. I made a taco salad and my husband made nachos. Tomorrow he'll have a taco or nachos for lunch using the leftovers. 

This made for a quick easy dinner after a very long day. I used a couple of shortcuts so I'm sharing images of the products I used. All products were found at Walmart, and can be found at many chain grocery stores. Naturally, you can use whatever safe versions of these ingredients you have on hand. 

Recipe (feeds two with potential leftovers but can easily be doubled):

  • Brown 1/2 lb ground turkey until almost done, breaking it down to crumbles as it cooks.
  • Add 1/2 cup water and half packet of taco seasoning and simmer on medium-low heat until the water evaporates. (You can also break the meat down a bit more during this time if you like.)
  • Finally, Stir in 1 cup of canned black beans (I use Bush's unseasoned black beans)
  • Cook the rice packet in the microwave as instructed on the package. (It takes 90 seconds)
  • Serve with
    • Shredded lettuce
    • Sliced cherry tomatoes (or diced tomatoes)
    • Diced red onion
    • Salsa
    • Vegan sour cream
    • Any other toppings you like on your tacos 😃
