Cowboy Caviar | Kathy's Vegan Kitchen
Prior to my AGS diagnosis there I had a very short list of foods I didn't like
- Chicken and turkey legs
- Most beans, pease, and legumes (except black beans)
- Organ meats (I ate them as a child but adult me opted out)
After my AGS diagnosis, I decided to embrace whole foods. I slowly worked my way up to reintroducing some fo the foods I'd disliked when I was younger. (Not chicken and turkey legs, because....gross!) Legumes were a no-go but when I asked in on e of my facebook support groups about recipes using Black-eyed Peas, the recommendation was Cowboy Caviar. I found this video from Kathy's Vegan Kitchen and I made 1 recipe (she makes double the recipe in this video.) It was so good! I froz3 half and over three weeks at it all in various dishes. I'll share a few of those recipes in future posts.
